  • 3 cloves fresh garlic, minced
  • 1 cup sun-dried tomatoes packed in oil, chopped
  • 1 cup heavy cream
  • 16 oz gnocchi (fresh or store-bought)
  • 1 cup low-sodium chicken broth
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook chicken for about 6-7 minutes per side until golden brown. Remove from skillet and let rest.
  2. In the same skillet, add more olive oil if needed. Sauté minced garlic for about 1 minute until fragrant, then add chopped sun-dried tomatoes and cook for another minute.
  3. Pour in heavy cream and chicken broth; stir continuously until combined. Bring to a gentle simmer and add Italian seasoning; simmer for 3-5 minutes.
  4. Return cooked chicken to the skillet along with any juices from the plate. Add cooked gnocchi and gently stir until evenly coated in the sauce.
  5. Taste and adjust seasoning if necessary. If too thick, add more broth gradually until desired consistency is reached.
  6. Serve immediately, garnished with freshly chopped parsley or grated Parmesan cheese.
