  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 28 oz canned diced tomatoes (with Italian herbs)
  • 4 cups beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning

Instructions

  1. Brown the ground beef with chopped onion and minced garlic in a skillet over medium heat. Drain excess fat and transfer to the crockpot.
  2. Add diced tomatoes (with juices), beef broth, and Italian seasoning to the crockpot. Stir well.
  3. Break lasagna noodles into bite-sized pieces and add them to the crockpot. Mix gently to combine.
  4. Cover and cook on low for 4 hours or high for 2 hours until noodles are tender.
  5. About 15 minutes before serving, spoon dollops of ricotta cheese into the soup and cover again to warm through.
  6. Serve hot, garnished with shredded mozzarella cheese.
