Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups panko breadcrumbs
  • Salt and pepper to taste
  • Cooking spray or olive oil for baking
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp mirin
  • 1 tbsp rice vinegar

Instructions

  1. 1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly spray with cooking spray.
  2. 2. Set up a breading station: one bowl with seasoned flour, another with beaten eggs, and the last with panko breadcrumbs.
  3. 3. Coat each chicken breast in flour, dip into eggs, then press firmly into the panko until completely coated.
  4. 4. Place the breaded chicken on the prepared baking sheet and lightly spray them again to enhance crispiness. Bake for 20-25 minutes or until golden brown and cooked through.
  5. 5. While chicken bakes, whisk together soy sauce, mirin, and rice vinegar for the dipping sauce.
  6. 6. Serve hot, drizzled with sauce on top.
