  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 tsp olive oil
  • 6 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ cup chili sauce (for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray.
  2. In a large pot, cover chicken breasts with water, season with salt and pepper, and boil for 15-20 minutes until cooked through. Shred the chicken after cooling slightly.
  3. In a mixing bowl, combine shredded chicken, olive oil, cumin, chili powder, and both cheeses. Mix until well combined.
  4. Lay out tortillas and place about two tablespoons of the chicken mixture on one end; roll tightly but not too tight.
  5. Place the rolled taquitos seam-side down in the baking dish; lightly spray tops with cooking spray. Bake for 20-25 minutes or until golden brown.
