  • 2 lbs beef chuck roast, diced into 1-inch cubes
  • 2 medium yellow onions, chopped
  • 3 cloves garlic, minced
  • 1 cup bell peppers (red or green), chopped
  • 2 medium carrots, diced
  • 2 tbsp tomato paste
  • 4 cups low-sodium beef broth
  • 2 tbsp sweet Hungarian paprika
  • 12 bay leaves

Instructions

  1. Prepare your ingredients by dicing the beef and chopping the vegetables.
  2. In a large pot over medium-high heat, add 1 tablespoon of oil and sear the beef until browned on all sides (about 5-7 minutes). Remove and set aside.
  3. In the same pot, sauté onions and bell peppers for about 3-4 minutes until softened. Add minced garlic and cook for an additional minute.
  4. Return the beef to the pot and add carrots, tomato paste, paprika, bay leaves, and beef broth. Mix well.
  5. Bring to a boil, then reduce heat to low and simmer partially covered for 1.5 to 2 hours until meat is tender.
  6. Remove bay leaves before serving hot with crusty bread or over egg noodles.
