  • 1 cup red lentils, rinsed
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp turmeric
  • 1 tsp chili powder
  • 4 cups low-sodium vegetable broth
  • Salt to taste

Instructions

  1. Wash and peel the carrots, then chop them into small pieces for even cooking. Rinse the lentils under cold water until clear.
