  • 1/2 cup canned pumpkin puree
  • 1/4 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh chives, chopped

Instructions

  1. Boil the eggs: Place eggs in a saucepan, cover with cold water, bring to a boil. Cover, remove from heat, and let sit for 12 minutes.
  2. Prepare filling: Cool eggs in ice water. Peel, halve lengthwise, and remove yolks. Mash yolks with pumpkin puree, mayonnaise, mustard, spices, salt, and pepper until smooth.
  3. Fill egg whites: Spoon or pipe the mixture back into each egg white half.
  4. Garnish: Sprinkle with chopped chives and optional paprika.
  5. Serve: Arrange on a platter and enjoy immediately or chill until serving.
