  • 1 cup short-grain sushi rice
  • 1¼ cups water
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
  • 4 nori sheets
  • 1 ripe avocado, sliced
  • 1 cucumber, thinly sliced
  • 1 medium carrot, julienned
  • 2 tbsp low-sodium soy sauce (for serving)

Instructions

  1. Rinse sushi rice under cold water until clear. Combine with water in a saucepan, boil, then simmer covered for 18 minutes. Let sit for 10 minutes off heat.
  2. In a bowl, mix rice vinegar, sugar, and salt; fold into cooked rice while cooling.
  3. Prepare vegetables by slicing avocado, cucumber, and julienning carrots.
  4. Lay a nori sheet on a bamboo mat and spread rice over it, leaving an inch at the top. Add vegetable fillings horizontally.
  5. Roll tightly away from you using the mat; moisten the edge to seal.
  6. Slice each roll into bite-sized pieces and serve with soy sauce.
