Ingredients

Scale
  • 4 bone-in pork chops (1-inch thick)
  • 2 large yellow or Vidalia onions, thinly sliced
  • 1 cup beef broth
  • 1 cup Gruyère cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions and cook for 20-25 minutes until golden brown and caramelized.
  2. Season pork chops with salt and pepper. In another skillet over medium-high heat, sear each chop for 3-4 minutes on each side until browned, then set aside.
  3. In the onion skillet, stir in beef broth and balsamic vinegar; scrape any browned bits from the bottom.
  4. Preheat oven to 375°F (190°C). Place seared pork chops in an oven-safe dish, pour onion mixture on top, and sprinkle with Gruyère cheese.
  5. Bake for 15-20 minutes until the internal temperature reaches at least 145°F (63°C), ensuring the cheese is bubbly.
