  • 3 large yellow onions, sliced
  • 2 cups low-sodium beef broth
  • 4 garlic cloves, minced
  • 4 sprigs fresh thyme
  • 1 cup dry red wine
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. 1. Preheat oven to 300°F (150°C). Season chuck roast with salt and pepper.
  2. 2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast for 3-4 minutes on each side until browned. Remove from pot.
  3. 3. Add sliced onions to the pot and cook until golden brown, about 10-15 minutes. Stir occasionally. Add minced garlic and sauté for another minute.
  4. 4. Return the seared roast to the pot. Pour in beef broth, red wine, Worcestershire sauce, and add thyme sprigs. Stir well.
  5. 5. Cover the pot and slow cook in the oven for about three hours or until fork-tender. Let rest before slicing.
