  • 1 (15 oz) can 100% pumpkin puree
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a medium bowl, mix graham cracker crumbs and melted butter until combined. Press this mixture evenly into the bottom of the prepared dish to form the crust.
  3. In a large bowl, beat softened cream cheese until smooth. Gradually add sugar, mixing well. Add pumpkin puree, one egg at a time, followed by cinnamon, nutmeg, and vanilla extract until creamy.
  4. Pour the filling over the crust and bake for 30-35 minutes until set but slightly jiggly in the center.
  5. Allow to cool at room temperature for an hour, then refrigerate for at least two hours before slicing into bars.
