  • 1 lb ribeye or sirloin steak
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 2 cups sharp cheddar cheese, shredded
  • 4 medium Yukon Gold potatoes, peeled and thinly sliced
  • Salt and pepper to taste
  • 1 tsp fresh rosemary or thyme (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish.
  2. In a large bowl, toss the sliced potatoes with salt, pepper, and half of the cheddar cheese.
  3. Season both sides of the steak with salt and pepper. In a skillet over medium-high heat, melt 2 tbsp of butter and sear the steak for about 4 minutes on each side until browned.
  4. Add minced garlic to the skillet with the remaining butter; sauté for about 1 minute.
  5. Layer half of the potato slices in the baking dish, drizzle half of the garlic butter over them, place the steak on top, then add remaining potato slices. Drizzle with leftover garlic butter and sprinkle remaining cheddar cheese.
  6. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until golden brown.
