  • 2 lbs Yukon Gold potatoes
  • 6 strips bacon, diced
  • 1 cup red onion, diced
  • 1/2 cup apple cider vinegar
  • 2 tbsp Dijon mustard
  • Salt and pepper, to taste
  • 1 tbsp sugar (optional)
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Peel and cut the Yukon Gold potatoes into bite-sized pieces. Boil in salted water until fork-tender (about 15-20 minutes). Drain and set aside.
  2. In a skillet over medium heat, cook the diced bacon until crispy. Remove with a slotted spoon and drain on paper towels, leaving some fat in the pan.
  3. Sauté the diced red onion in the bacon fat until translucent (3-5 minutes). Remove from heat.
  4. In a large bowl, whisk together apple cider vinegar, Dijon mustard, salt, pepper, and optional sugar. Add the cooked potatoes along with sautéed onions and crispy bacon.
  5. Gently toss all ingredients until well combined; adjust seasoning if needed.
  6. Serve warm, garnished with chopped fresh parsley.
