  • 1 cup freshly squeezed grapefruit juice
  • 2 tbsp grapefruit zest
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup all-purpose flour
  • ½ cup unsalted butter, softened
  • ½ cup powdered sugar (for the crust)

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking dish with nonstick spray.
  2. In a mixing bowl, beat softened butter and powdered sugar until creamy. Gradually add flour until crumbly. Press mixture into the bottom of the prepared dish.
  3. Bake crust for 15 minutes or until lightly golden. Let cool slightly.
  4. In another bowl, whisk eggs, granulated sugar, grapefruit juice, zest, and flour until smooth. Pour over cooled crust.
  5. Bake for an additional 20-25 minutes or until set; a toothpick should come out clean.
  6. Allow bars to cool completely before cutting into squares and dust with powdered sugar.
