  • 1 cup bell peppers (chopped)
  • 1 cup onions (chopped)

  • 2 tbsp low-sodium soy sauce
  • 2 green onions (sliced)
  • 1 tbsp toasted sesame seeds

  1. Chop bell peppers and onions into bite-sized pieces; set aside. Rinse rice or quinoa under cold water until clear.
  2. In a medium saucepan, combine rice or quinoa with water per package instructions. Bring to a boil, then reduce heat, cover, and simmer for about 15-20 minutes.
