  • 4 ripe persimmons (Fuyu or Hachiya)
  • 1 cup granulated sugar
  • 2 tbsp fresh lemon juice
  • 1/4 cup pectin (powdered or liquid)
  • 1 cup water

  1. Wash and quarter the ripe persimmons, leaving the skins on.
  2. In a large pot, combine chopped persimmons and water; bring to a gentle boil for about 10 minutes, stirring occasionally until softened.
  3. Reduce heat, add sugar and lemon juice; stir until sugar dissolves completely.
  4. Sprinkle in pectin while stirring continuously; cook on medium heat for another 5-10 minutes until it reaches a rolling boil.
  5. Test consistency by dropping a spoonful onto a cold plate; if thickened upon cooling, it's ready to jar.
  6. Ladle hot jam into sterilized jars and seal tightly.
