  • 2 slices whole grain bread
  • 1 ripe avocado
  • 1 cup cherry tomatoes, halved
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh basil leaves
  • 2 tsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Place the slices of whole grain bread on a baking sheet and lightly brush each slice with olive oil.
  2. Toast the bread in the oven for about 8-10 minutes, until golden brown.
  3. While the bread is toasting, scoop the ripe avocado into a bowl, add salt and pepper, and mash until creamy.
  4. Halve the cherry tomatoes and set aside.
  5. Once the bread is toasted, spread mashed avocado generously on each slice. Top with halved cherry tomatoes and crumbled feta cheese.
  6. Garnish with fresh basil leaves, an extra drizzle of olive oil, and a sprinkle of salt. Serve immediately.
