  • 2 cups fresh spinach (approximately 60g)
  • 1 cup crumbled feta cheese (approximately 150g)
  • 1 sheet puff pastry (thawed)
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • ¼ tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat 1 tbsp olive oil over medium heat, add spinach, and sauté until wilted (3-5 minutes).
  3. In a bowl, mix wilted spinach, feta cheese, garlic powder, and black pepper until well combined.
  4. Roll out the puff pastry on a floured surface and cut into squares.
  5. Place a spoonful of the spinach-feta mixture on each square, fold corners or leave open-faced.
  6. Brush with remaining olive oil and bake on the prepared sheet for 15-20 minutes until golden brown.
