  • 4 boneless, skinless chicken thighs
  • 1 cup uncooked long-grain rice
  • 2 cups low-sodium chicken broth
  • 1/4 cup pure honey
  • 1/4 cup BBQ sauce (your choice)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken thighs with salt and pepper.
  2. Sear the chicken for 5–7 minutes on one side until browned, then flip and brown the other side for an additional 5 minutes.
  3. In a bowl, mix honey, BBQ sauce, garlic powder, and onion powder to create the glaze.
  4. Temporarily remove the chicken from the skillet. Add uncooked rice and chicken broth; stir to combine evenly.
  5. Place the seared chicken back in the skillet on top of the rice mixture and drizzle half of the glaze over everything.
  6. Cover with a lid or foil and bake for about 30-35 minutes until the rice is tender and chicken is cooked through.
