Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup oil-packed sun-dried tomatoes, chopped
  • 1 cup fresh basil leaves
  • 4 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a large oven-safe skillet with olive oil.
  2. Season chicken breasts with salt and pepper. Sear them in the skillet over medium-high heat for about 5 minutes on each side until golden brown.
  3. Remove the chicken and set it aside. In the same skillet, add minced garlic and sauté for one minute until fragrant.
  4. Stir in sun-dried tomatoes, then pour in chicken broth and heavy cream, mixing well while scraping any brown bits from the pan.
  5. Return chicken to the skillet, nestling it into the sauce, and top with fresh basil leaves.
  6. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C). Serve drizzled with sauce.
