Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a mixing bowl, whisk together flour, baking powder, sugar, and salt.
  3. In another bowl, beat eggs and mix in milk and melted butter until combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just mixed.
  5. Fold in chocolate chips or blueberries if desired.
  6. Spoon batter into the muffin tin, filling each cup about two-thirds full.
  7. Bake for 12-15 minutes until golden brown; a toothpick should come out clean.
