  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts (walnuts or pecans)
  • 1/2 cup dried cranberries or raisins

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mash persimmons in a bowl until smooth.
  3. In another bowl, cream together granulated sugar, brown sugar, and butter. Mix in mashed persimmons, egg, and vanilla until combined.
  4. In a separate bowl, whisk flour, baking soda, cinnamon, and salt. Gradually add to wet ingredients without overmixing.
  5. Fold in nuts and dried fruit until evenly distributed.
  6. Drop rounded tablespoons of dough onto prepared sheets, spacing them apart. Bake for 10-12 minutes until golden at the edges.
