Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Peel and mash the persimmons in a bowl until smooth.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, and a pinch of salt.
  4. In another bowl, cream brown sugar and butter until fluffy. Add eggs one at a time and mix well. Stir in vanilla extract.
  5. Gradually mix the dry ingredients into the wet mixture, folding in mashed persimmons until just combined.
  6. Drop rounded tablespoons of dough onto prepared sheets, spacing them two inches apart. Bake for 12-15 minutes or until edges turn golden brown.
