  • 3/4 cup graham cracker crumbs

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, pumpkin pie spice, and salt.
  3. In a large bowl, cream softened butter, brown sugar, and granulated sugar until light and fluffy (about 3 minutes).
  4. Add eggs one at a time, then mix in pumpkin puree and vanilla extract until smooth.
  5. Gradually combine wet and dry ingredients. Fold in chocolate chips and graham cracker crumbs.
  6. Drop rounded tablespoons of dough onto prepared sheets, leaving space between cookies. Bake for 12-15 minutes until edges are golden.
