  • 2 large leeks, sliced into rings
  • 2 cups butternut squash, cubed
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and slice the leeks; peel and cube the butternut squash.
