  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season the beef chuck roast with salt and pepper, then sear on all sides until browned (about 4-5 minutes per side).
  3. Remove the roast from the pot and set aside. Add chopped onions and minced garlic to the pot; sauté until softened (about 3-4 minutes). Stir in rosemary and thyme.
  4. Deglaze the pot with beef broth, scraping up any browned bits from the bottom. Add cranberries and return the seared roast to the pot.
  5. Cover and braise in the oven for about 3-4 hours or until fork-tender.
  6. Once cooked, remove the roast from the pot, slice against the grain, and drizzle with cranberry glaze before serving.
