  • 4 cups low-sodium beef broth
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 8 oz fresh or dried ramen noodles
  • Garnish: Sliced green onions and soft-boiled eggs

Instructions

  1. Trim excess fat from the beef chuck roast and cut it into large chunks. Season with salt and pepper. Sear in a hot skillet until browned on all sides.
  2. Place the seared beef in the slow cooker. Add the beef broth, soy sauce, ginger, and garlic; stir gently to combine.
  3. Cover and cook on low for 6 hours until fork-tender.
  4. Remove the beef, shred it with two forks, then return it to the slow cooker. Add ramen noodles and cover again for an additional 10 minutes.
  5. Prepare soft-boiled eggs (boil for 6 minutes, then cool in ice water). Serve ramen hot topped with eggs and green onions.
