  • 1/2 cup beer (IPA or stout)
  • 3 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 cup warm water
  • 2 tbsp baking soda (for boiling)
  • Coarse sea salt (for topping)

Instructions

  1. Preheat smoker to 225°F (107°C). Season brisket with salt and pepper; smoke until it reaches an internal temperature of 195°F (90°C). Let rest, then shred.
  2. In a saucepan over medium heat, melt butter and whisk in flour until golden. Gradually add beer, stirring until thickened. Stir in cheddar and mustard powder until creamy.
  3. Combine warm water, yeast, sugar, flour, and salt to form a dough. Let rise for about an hour until doubled.
  4. Roll dough into circles; fill with brisket and beer cheese mixture. Seal tightly.
  5. Boil pretzel bombs in water with baking soda for 30 seconds on each side, then bake at 400°F (200°C) for 15-20 minutes until golden.
