Ingredients

Scale
  • 6 large eggs
  • 1/3 cup mayonnaise

  • 2 tsp chili paste (adjust for spice level)
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • 2 tbsp chopped chives or green onions

Instructions

  1. Boil the eggs: Place eggs in cold water in a saucepan, bring to a boil over medium-high heat. Remove from heat and cover for 12 minutes. Transfer to an ice bath.
  2. Peel and halve: After cooling, peel the eggs under running water. Cut each egg in half lengthwise and scoop yolks into a bowl.
  3. Make the filling: Mash yolks with mayonnaise, garlic, chili paste, mustard, salt, and pepper until smooth. Adjust seasoning as needed.
  4. Fill the egg whites: Generously fill each egg white half with yolk mixture using a spoon or piping bag.
  5. Garnish: Top with chopped chives or green onions before serving chilled or at room temperature.
