  • 2 cups fresh spinach, chopped
  • 3 garlic cloves, minced
  • 1 cup plain breadcrumbs
  • 1 large egg
  • 1 cup fresh mozzarella cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 cups marinara sauce (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. Sauté the spinach in olive oil over medium heat until wilted; set aside to cool.
  3. In a mixing bowl, combine ground beef, chopped spinach, minced garlic, breadcrumbs, egg, Parmesan cheese, Italian seasoning, salt, and pepper. Mix until just combined.
  4. Take about two tablespoons of the mixture, flatten it in your palm, place a cube of mozzarella in the center and mold the meat around it to form a ball.
  5. Arrange the stuffed meatballs on the baking sheet and bake for 25-30 minutes or until they reach an internal temperature of 160°F (70°C).
