Instructions

  1. Rinse sushi rice under cold water until clear; cook according to package directions. Let cool slightly.
  2. In a bowl, mix rice vinegar and 1 tablespoon granulated sugar until dissolved; fold into cooled rice.
  3. Beat heavy whipping cream until soft peaks form; gradually add 2 tablespoons granulated sugar and continue beating until stiff peaks form.
  4. Lay plastic wrap on a bamboo mat; spread an even layer of sushi rice, leaving an inch at the top. Add sliced strawberries and whipped cream in the center.
