  • 2 tbsp fresh ginger, grated
  • ½ cup teriyaki sauce
  • 2 tbsp brown sugar
  • 2 cups sushi rice
  • 2 tbsp rice vinegar
  • 1 medium cucumber, thinly sliced
  • 1 cup edamame, shelled
  • 1 avocado, sliced

Instructions

  1. Combine chicken breasts with teriyaki sauce, garlic, and ginger in a bowl. Let marinate for at least 30 minutes.
  2. Preheat grill or pan to medium-high heat. Cook marinated chicken for 6-7 minutes on each side until fully cooked. Rest before slicing.
  3. Rinse sushi rice until water runs clear. Cook according to package instructions (about 20 minutes). Fluff with a fork and mix in rice vinegar.
  4. Slice cucumbers and steam edamame according to package instructions (about five minutes).
  5. In serving bowls, layer sushi rice as the base, top with sliced chicken, cucumbers, edamame, and avocado. Drizzle with extra teriyaki sauce if desired.
