  • 1 cup fresh Thai basil leaves
  • 8 round rice paper wrappers
  • 1 cup grated carrots
  • 1 cup thinly sliced English cucumber
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • ½ cup sweet chili sauce (for dipping)

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat, then mix in carrots, cucumber, basil, soy sauce, and lime juice. Cook for an additional 2 minutes.
  2. Fill a shallow dish with warm water and dip each rice paper wrapper for about 10 seconds until softened but firm. Lay flat on a clean surface.
  3. Place about 2 tablespoons of the beef mixture in the center of each wrapper. Fold sides inward and roll tightly from bottom to top.
  4. To make the dipping sauce, combine sweet chili sauce with additional lime juice if desired.
  5. Arrange rolls on a platter and serve with extra sweet chili sauce.
