  • 1 large head of cauliflower (about 1.5 lbs), cut into florets
  • 3 tbsp extra virgin olive oil
  • 4 garlic cloves, minced
  • 1/2 cup grated fresh Parmesan cheese
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp fresh rosemary, chopped
  • 1/4 cup pine nuts, toasted
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine cauliflower florets with olive oil, minced garlic, thyme, rosemary, salt, and pepper. Toss until well coated.
  3. Spread the seasoned cauliflower on the baking sheet in a single layer and roast for 25-30 minutes until golden brown and tender.
  4. Remove from the oven and sprinkle grated Parmesan cheese over the hot cauliflower. Return to the oven for an additional 5 minutes until the cheese melts.
  5. Transfer to a serving platter and finish with toasted pine nuts and lemon zest before serving.
