Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup full-fat coconut milk
  • 1/4 cup fresh lime juice (about 23 limes)
  • 4 garlic cloves, minced
  • 2 tbsp brown sugar
  • 1/4 cup low-sodium soy sauce
  • 3 cups cooked jasmine rice
  • 1/4 cup chopped cilantro (for garnish)

Instructions

  1. Marinate the Chicken: In a large bowl, mix coconut milk, lime juice, garlic, brown sugar, and soy sauce. Add chicken breasts, ensuring they’re fully submerged. Cover and refrigerate for at least 30 minutes.
  2. Prepare Rice: Cook jasmine rice according to package instructions. For extra flavor, substitute water with coconut water.
  3. Cook the Chicken: Heat a skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and cook for 6-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C).
  4. Make the Sauce: Pour reserved marinade into the skillet after removing chicken. Simmer for about 5 minutes until thickened.
  5. Assemble Bowls: Slice chicken and layer over rice in serving bowls. Drizzle with sauce and garnish with chopped cilantro.
