  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, granulated sugar, baking powder, and salt until combined.
  3. In another bowl, mix plant-based milk, vegetable oil, and vanilla extract. Add this to the dry ingredients and stir until you have a thick dough.
  4. If the dough is too sticky, chill in the refrigerator for 15 minutes.
  5. Scoop tablespoon-sized portions of dough and roll them into balls. Coat each ball generously in powdered sugar until fully covered.
  6. Arrange the coated cookie balls on the prepared baking sheets about two inches apart. Bake for 10-12 minutes until crinkled on top but slightly soft in the center.
  7. Let cool on wire racks before serving.
