  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup Caesar dressing
  • 1 cup freshly grated Parmesan cheese
  • 1 cup plain breadcrumbs
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon (about 2 tbsp)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper, then coat generously with Caesar dressing. Let marinate for 30 minutes.
  3. In a bowl, combine breadcrumbs and grated Parmesan.
  4. Remove chicken from the marinade, allowing excess dressing to drip off. Dredge each piece in the breadcrumb mixture until fully coated.
  5. Place coated chicken in the prepared baking dish and bake for 25-30 minutes or until golden brown and cooked through (internal temperature of 165°F/75°C).
