  • 1 cup long-grain white rice
  • 1/2 cup honey BBQ sauce
  • 1 cup low-sodium chicken broth
  • 1 medium yellow onion, chopped
  • 1 bell pepper, chopped (any color)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the onion and bell pepper into bite-sized pieces.
  2. Preheat a large skillet over medium-high heat and add olive oil. Sear chicken breasts for 3-4 minutes per side until golden brown. Remove from skillet and keep warm.
  3. In the same skillet, sauté onions and bell peppers for about 5 minutes until softened.
  4. Return chicken to skillet, pour in honey BBQ sauce and chicken broth, then sprinkle with garlic powder and paprika.
  5. Stir in rice, bring to a boil, cover, reduce heat to low, and simmer for about 20 minutes or until rice is tender.
  6. Let sit covered for an additional five minutes before fluffing with a fork and serving.
