  • 1 cup bell peppers, diced (mix of colors)
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the chopped onion until translucent, then add the garlic and bell peppers until softened.
