  • 4 large flour tortillas
  • 1 cup mixed bell peppers, chopped
  • ½ cup sour cream (or Greek yogurt)
  • 1 cup shredded cheddar cheese
  • ¼ cup fresh cilantro, chopped
  • 1 cup diced tomatoes (fresh or canned)
  • ¼ cup red onion, finely chopped
  • 2 tbsp lime juice
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the filling by sautéing chopped bell peppers in olive oil over medium heat until tender. Add rinsed black beans, cumin, salt, and pepper; heat through.
  2. Make the salsa by mixing diced tomatoes, red onion, lime juice, cilantro, salt, and pepper in a bowl.
  3. Assemble the burritos by placing the black bean mixture, cheese, sour cream, and salsa onto each tortilla.
  4. Roll each tortilla tightly from bottom to top after folding in the sides.
  5. Cook seam-side down in the skillet until golden brown on both sides.
