  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh broccoli florets
  • 1 medium carrot, thinly sliced
  • 4 garlic cloves, minced
  • 1 inch fresh ginger, minced
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 2 tbsp vegetable oil (for cooking)

Instructions

  1. Prepare your ingredients by washing and chopping the vegetables. Slice the chicken into bite-sized pieces.
  2. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned (5-7 minutes). Remove from skillet and set aside.
  3. In the same skillet, add another teaspoon of oil if necessary. Stir-fry minced garlic, ginger, broccoli, and carrot for about 3-4 minutes until tender-crisp.
  4. Whisk together soy sauce, sesame oil, and cornstarch mixture in a small bowl while vegetables cook.
  5. Return the chicken to the skillet and pour the sauce over everything. Stir well to coat and heat through for another 1-2 minutes.
  6. Serve hot over rice or noodles.
