  • 1 lb lean ground chicken
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a skillet over medium heat, sauté the chopped onion until translucent. Add minced garlic and cook until fragrant.
  3. In a large mixing bowl, combine ground chicken, sautéed onions and garlic, breadcrumbs, Parmesan cheese, parsley, and the egg. Season with salt and pepper.
  4. Shape the mixture into a loaf and place it on the prepared baking sheet or into the loaf pan.
  5. Mix ketchup and Worcestershire sauce in a small bowl; spread half over the meatloaf.
  6. Bake for 45-50 minutes until cooked through (internal temperature reaches 165°F). During the last ten minutes of baking, spread remaining sauce over the top.
