  • 2 lbs beef chuck roast
  • 2 lbs Yukon Gold potatoes, quartered
  • 6 cloves fresh garlic, minced
  • 1/2 cup unsalted butter (1 stick)
  • 1 cup low-sodium beef broth
  • 1/4 cup low-sodium soy sauce
  • 1 tsp dried thyme
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Prepare the ingredients by peeling and quartering the potatoes and finely mincing the garlic.
  2. In a skillet over medium-high heat, melt 2 tbsp of butter. Season the beef chuck roast with salt and pepper, then sear each side for about 3 to 4 minutes until browned.
  3. Transfer the seared beef to the slow cooker. Arrange the potatoes around the meat, then add minced garlic, thyme, soy sauce, Worcestershire sauce, and beef broth.
  4. Cut the remaining butter into small pieces and place on top of the mixture in the slow cooker.
  5. Cover and cook on low for 8 hours or high for 4 hours until the beef is fork-tender.
  6. Shred the beef inside the slow cooker using two forks and mix everything together before serving.
