  • 4 cups low-sodium vegetable broth

  • Salt, to taste
  • 2 green onions (sliced)
  • 2 soft-boiled eggs

Instructions

  1. Preheat oven to 400°F (200°C). On a baking sheet lined with parchment paper, place halved tomatoes cut-side up. Drizzle with olive oil, sprinkle with salt, and roast for 25-30 minutes until caramelized.
  2. Boil water in a pot and cook ramen noodles according to package instructions until al dente. Drain and set aside.
  3. In a large pot over medium heat, combine roasted tomatoes, vegetable broth, miso paste, and smoked paprika. Stir until miso dissolves; simmer for 10 minutes.
