  • 1 can (15 oz) pumpkin puree
  • 3/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3 large eggs
  • 1 cup heavy cream
  • 3 egg whites (for meringue)
  • 1/4 cup granulated sugar (for meringue)

Instructions

  1. Preheat oven to 425°F (220°C). Roll out pie crust and fit into a 9-inch pie pan. Prick bottom with a fork.
  2. In a bowl, mix pumpkin puree, sugar, cinnamon, nutmeg, eggs, and heavy cream until smooth. Pour into prepared crust.
  3. Bake for 15 minutes at 425°F (220°C). Reduce temperature to 350°F (175°C) and bake for another 35-40 minutes until set.
  4. For the meringue, beat egg whites until soft peaks form. Gradually add sugar and continue beating until stiff peaks form. Spread over cooled pie.
  5. Bake pie again at 350°F (175°C) for 10-15 minutes until meringue is lightly browned.
