  • 1 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • ½ cup raspberry jam
  • Buttercream frosting (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, mix flour, cocoa powder, baking powder, and sugar. In another bowl, whisk together eggs, milk, oil, and vanilla. Combine wet and dry ingredients until smooth.
  3. Fill each liner two-thirds full with batter. Bake for 18-20 minutes or until a toothpick comes out clean.
  4. Cool cupcakes for 5 minutes before transferring them to wire racks. Core the center of each cupcake and fill with raspberry jam.
  5. Frost the cooled cupcakes with buttercream frosting. Optionally tint some frosting red for added effect.
