  • 1/2 cup whole milk
  • 1/4 cup unsalted butter (melted)
  • For the Cinnamon Swirl: 1/4 cup brown sugar (packed)
  • 2 tbsp unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together pumpkin puree, eggs, milk, granulated sugar, and melted butter until smooth. In another bowl, combine flour, baking powder, cinnamon, and salt; gradually add to the wet mixture.
  3. For the cinnamon swirl, mix brown sugar and melted butter until paste-like.
  4. Scoop two-thirds of the batter into each muffin cup, add a teaspoon of cinnamon filling on top, and swirl gently.
  5. Bake for 18-20 minutes until a toothpick comes out clean. Cool in the pan for five minutes before transferring to wire racks.
