  • 2 cups mixed mushrooms (cremini and portobello, finely chopped)
  • 2 cups fresh spinach (sautéed)
  • 1 cup grated carrots (about 2 medium carrots)
  • 1 medium yellow onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 cup walnuts or pecans (chopped and toasted)
  • 2 tsp fresh thyme (chopped)
  • 2 tsp fresh rosemary (chopped)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Plant-based milk for brushing

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic, carrots, and mushrooms. Cook until softened; stir in sautéed spinach and season with salt and pepper.
  3. Remove from heat; cool slightly. Stir in nuts and herbs to create the filling.
  4. Roll out puff pastry on a floured surface, place the filling in the center, fold edges over tightly, and brush top with plant-based milk.
  5. Bake for 25-30 minutes until golden brown; keep an eye on it to prevent burning.
