  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 4 cups low-sodium chicken broth
  • 3 cups kale or spinach, chopped
  • 2 tsp Italian seasoning
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Prepare the vegetables by washing and chopping the onion, carrots, celery, and garlic.
  2. In a large pot over medium heat, heat olive oil and sauté the onion, carrots, and celery until soft (about 5 minutes). Add garlic and cook for an additional minute until fragrant.
  3. Stir in diced tomatoes with their juice and chicken broth; bring to a simmer for about 10 minutes.
  4. Add chopped kale or spinach along with Italian seasoning; stir well and simmer for another 5 minutes until greens are wilted.
