  • 4 medium carrots, sliced
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth

  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 325°F (163°C). Season the chuck roast generously with salt and pepper.
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the roast on all sides until browned (3-4 minutes each side).

  4. Return the roast to the pot, add carrots, beef broth, thyme, bay leaves, and any additional seasonings. Ensure at least half of the meat is submerged in liquid.
  5. Cover and braise in the oven for about 3 hours or until fork-tender.
